Pasta from the microwave?

Okay, you know I use my rice cooker to cook some kinds of pasta, but when Cook’s Illustrated  reviewed microwave pasta cookers and gave it a thumbs up, I had to try–I mean that should be even faster and easier than rice cooker, right?

I ordered the Fasta Pasta Microwave Cooker.  Delivered quickly, and needless to say, got tried out quickly. I’ve cooked both ravioli and capellini in it successfully.  Cooking times are obviously going to vary with the power of the microwave, but generally the times given on the included card have been very accurate.  It’s easy to move around as there are handles on both side.

The drain slots in the lid did not let the capellini slip through.  I’m really surprised–but I think that will be my method of choice for cooking pasta in the future.

Fårikål (Norwegian lamb and cabbage stew)

Cold, rather dreary day so I’m making some warm, cuddly, comfort food from my most recent cookbook, The Kitchen of Light by Andreas Viestad.

I made the lamb and cabbage stew–well, sort of–I had goat meat in the freezer so I substituted that for lamb.  As I’m writing, I’m smelling it cooking–and practically drooling on my keyboard.

The stew is in the oven in my “small” Dutch oven (did not make the whole recipe). It smells SO good. I’ve been reading posts from a friend on Facebook singing the praises of this stew–reheats well–which means I can make a batch and freeze some.

The seasoning of this stew is bay leaves and black peppercorns–a lot of black peppercorns, cooked with the meat and cabbage.  This surprised me when I read the recipe because I’ve seen sources saying that black peppercorns will be bitter with long cooking, so it’s not usually added until late in cooking, though this is not dry heat, so that may make a big difference. This recipe calls for 1 to 2 tablespoons of black peppercorns.  (From tasting so far, I think I’m going to want to add more black peppercorns.)

Product.DisplayNameReally good, fresh-ground black pepper is one of my favorite spices.  I’ve gotten hooked on the India Special Extra Bold Tellicherry  and that’s what I’m using in this recipe.  Regular Tellicherry or Malabar pepper should also work.

Fårikål (Norwegian lamb and cabbage stew)

This recipe is adapted  from The Kitchen of Light (Andreas Viestad)–It’s easily adapted for single-serving cooking, but also suitable for making the full recipe and reheating/freezing.

Ingredients

  • 6 pounds of bone-in lamb shoulder, trimmed and cut into 1-1/2-inch pieces.
  • 4 pounds of green cabbage, shredded
  • 1 to 2 tablespoons black peppercorns
  • 2 bay leaves
  • 3 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 4 cups cold water
  • fine sea salt (to taste)

Preparation

  • Layer the meat and cabbage in a large pot
  • Add black peppercorns, bay leaves, butter, and sprinkle in flour
  • Add water
  • Bring to a simmer, covered,
  • Cook about 2 hours over medium-high heat about 2 hours
  • To increase spiciness, add 1 more tablespoon peppercorns and cook an additional 15 minutes
  • Season to taste with salt

My first adaptation was the use of goat meat since that’s what I had in the freezer–as well as goat brown stock.

The goat meat was excellent, but in the future  I’ll use bone-in lamb shoulder chops, cut into appropriate-sized chunks.  My other adaptation of this recipe was to put it in the oven to cook at 300°F until the meat was very tender. It’s unlikely that I’ll want to make full quantity  of this recipe–more likely half, which will still give more than one meal, and  some to freeze.

This is NOT a pretty dish.  By the time the meat is really tender, the cabbage is NOT going to be pretty and bright green.  There’s more discussion of this dish on My Little Norway.  I like more peppercorns than that recipe uses–I actually added a lot more–and finished my serving with carefully roasted black peppercorns, coarsely crushed.

This has me looking for other recipes using cabbage–which I think is an under-appreciated winter vegetable. Too often I think it’s thought of as “slaw”.  After reading Viestad’s cookbook and North: The New Nordic Cooking of Iceland  by Gunnar Karl Gislason and Jody Eddy,  I want to explore more Scandinavian cooking.  I found lots more recipes on New Scandinavian Cooking, too–and the manifesto of the “New Nordic Cuisine”.

For a beverage with this dish? Well, a porter would be excellent. If I were doing wine, I think I’d look for something really robust–something that has at least some alicante bouchet in it, or maybe a Minervois–I think this calls for some research!

A “roast” beef sandwich

Sandwiches are not just something to be thrown together without thought–definitely NOT two thin slices of baloney and Wonder bread!  They are a special kind  of meal–sometimes comfort food (like grilled cheese sandwiches) and sometimes even need planning when cooking for one person.  I’m always on the lookout for good “recipes”–or maybe inspirations–for sandwiches–particularly roast beef.

As much as I like cooking for one, there are a few drawbacks. One is that  realistically you can’t do real roast beef.  One of the things I miss is a good roast beef sandwich–it’s just not the same when the roast beef comes from the deli–no matter how good the deli.

One of the ways to satisfy my craving for roast beef sandwiches is with the planned  “leftovers” from my  thick-cut  steak–intentional leftovers of nice rare, pink, juicy  steak to slice  thinly and make a sandwich.  Then the fun begins–it’s a happening.

  •  Start with good bread (my oat bread , if possible),
  • Add some  flavorful, spicy greens:  radish sprouts or possibly arugula, or endive.
  • Maybe tomato,  if in season.
  • Cheese:  something “bleu”– gorgonzola dolce, Cabrales,  or Danablu–is one of my favorites with beef, though nothing wrong with a good cheddar or Swiss.
  • Maybe some thinly sliced red onion (or Walla Walla, Maui, or Vidalia,   sweet onions, if those just happen to be lying around).
  • Maybe a good “smear” of horseradish or horseradish sauce, instead of onion.
  • Finally,  a thin film of butter, preferably European style cultured (salted or unsalted)!
  • The final touch would be a sprinkle of fleur de sel.

Now choose a beverage–beer, cider, or even a glass of wine. Enjoy.

Blood oranges….

I have to say that for the most part, I hate shopping–except food-related shopping. When I do food-related shopping, I almost always come home with something that was not on the shopping list (Yes, I do make shopping lists, but I don’t really do meal planning.)  do sometimes venture in to the food store without a list, though I do try not to go food shopping when I’m hungry. Sometimes I go to the grocery store impulsively and spontaneously–triggered by some extraneous event.

My last such foray was triggered by sitting at the counter of Hope Valley Diner discussing food with another regular lunch customer–also a foodie.  What sent me to the grocery store was his mention of a chocolate cake from Fresh Market: namely chocolate ganache cake.That definitely got my chocolate imagination going–after all ganache is basically chocolate and cream, maybe some butter–but it’s really serious chocolate–adult chocolate.

Being in need of a chocolate fix since I’d been indexing all morning, I detoured by the Fresh Market on my way home (it really wasn’t more than a half mile in the opposite direction) hoping that I would find chocolate ganache cake by the slice. So–my intent on entering the Fresh Market was to obtain a single slice of chocolate cake.

As I walked through the entrance into the vestibule I was immediately faced with packages of California-grown Moro blood oranges. I seem to be constitutionally incapable of walking away from blood oranges, so there was the first “additional” item, so I really did need to get a basket though I hadn’t thought I needed one.  Now the blood oranges were not individual–they came in a little easy to carry bag–meaning that I now had several blood oranges.

Continuing on my way to the bakery section, I detoured though the produce (around the edge of the store).  That took me past the Bolthouse juices. (Yes, I find daily grapefruit, orange, etc boring too many days in a row.) I noticed a couple that I’d not found at my Harris Teeter market, so those (Daily Golden Vedge and the Stone Fruit Smoothie–still haven’t found the Mango Ginger + carrot) )got popped into the basket.

I made it to the bakery counter after a brief detour around the cheese counter and the seafood salad bar. I first noticed a whole chocolate ganache cake–shiny top as you’d expect from ganache, very dark, with the sides of the cake covered with dark chocolate shavings or chopped. Thankfully, there was a single slice of this luscious looking cake in the case. That got put into the basket with a sigh of relief–after all, THAT was what I came for! I made it back past the chocolate bars and other candy without adding anything more to the basket, checked out, and headed for home.

Blood Orange and Sage Sparkling SodaOnce home I had a blood orange–and realized that I was going to be eating or juicing blood oranges for a bit. Though straight blood orange juice is certainly not a hardship, serendipity has a way of intervening. While I was perusing my favorite blogs, what should I find but a gorgeous photograph and a recipe for blood orange and sage sparkling soda.

The image at the left is from Snixy Kitchen blog–just too gorgeous not to “plagiarize” with attribution, and share. I’d not thought of the combination of sage and orange, but with the “imagery” of the blood orange I’d just eaten, and a brush of the sage wintering on my deck, I knew I had to try it. This as a beverage is definitely a keeper–I’m sure that I’ll be making sage simple syrup again, and I have to think this would make a great sorbet as well as something to put in a glass and drink.  This combination of orange and sage also has me thinking about veal, pork, maybe chicken….Thank you, Snixy Kitchen for a great combination!

Now if you’re wondering about the chocolate ganache cake?  Well, I ate it before it even occurred to me to take a picture, and I haven’t found a chocolate cake image that even comes close–so I’ll have to go with words: very, very dark, moist, with ganache between the layers and as icing, not too thick.  Dark chocolate chips/shaving on the sides, not too sweet, but sweet enough–adult chocolate–absolutely luscious.  That’s probably where I’ll go look for my next chocolate fix.

OMG, what’s that smell?

Reading a Facebook post the other morning from a friend who posted about a situation that I’ve experienced–something presumably a mouse, dying in the wall (and the resulting olfactory stimuli that pervade the environs),  brought to mind another olfactory experience….

Early morning. Open refrigerator door to get milk for morning café au lait. Pour milk.  Open fridge door, put milk back. Something finally filters through to the conscious level even without the coffee yet. OMG! What is that smell? What has died in there? 

Drink coffee, come back for second  round.  Pour milk, put milk back.  Have second cup of coffee.  Recheck fridge.  Drat!  I really did smell something that needs to go away urgently. Something smells weird in there and it’s not  in the league of things handled by baking soda.

One of my least favorite morning events–I’ve just discovered that, even though I’ve thought about it for several days and procrastinated, I now HAVE to clean out the fridge.

It seems that the fridge is the best (most accurate?) reflection of the general state of life in this household. There are areas of my home which are constantly disaster areas, not a big deal–they just are; but I know I’m in trouble when the fridge becomes one.

When I’ve been hassled, harried, beleaguered, and generally frenetic, that’s when the fridge gets out of control. Usually when it’s least convenient to have to pull everything out to find the culprit, but there’s no escaping it–I have to  do it NOW!

The current fridge situation, corresponds to the very noticeable, or notable, hiatus here (sounds better than just saying gap or hole).  For the last several months I’ve dealt with a Clostridium difficile infection that has really turned by life kind of kitty-wampus (not over yet, but improved). Fortunately, since I work at home as a freelance indexer and the one course that I was teaching at a local community college was online, I was able to keep on with those things.

Cooking was another matter altogether since I had absolutely no appetite. At the best of times I can be a pernickety eater (as I’ve said before I don’t deal well with “leftovers”), but add don’t-feel-well-but-must-eat, and that just fills up the fridge with all sorts of odds and ends.

The places in my home that are usually disaster areas, are still, and even more, disastrous, and I’ve added new ones–but most urgently it’s the fridge!  I have to get that sorted so that I can get back to normal cooking since I’m beginning to regain an interest in food (eating and not just reading cookbooks) and actually cooking.

So, into the depths of the fridge….

For chocolate lovers….

I just have to share this post from Spoon, Fork, Bacon for Double Chocolate Pound Cake!  Pound cakes are my favorite in almost any flavor, but then add chocolate, and I’m likely to eat way more of this than I should. I’ve not made it yet, but it’s on for the weekend.

Hot & sour soup

Swanson hot and sour brothOccasionally  my curiosity gets the better of me while I’m meandering through the supermarket and I bring home something that I usually would not buy.  This time is was a box of Swanson’s Chinese Hot & Sour Flavor Infused Broth.  Usually the “flavor infused” would be a signal to walk on by. Since I do use Swanson’s chicken and beef broths and stocks, I stopped and looked at the ingredients. I was pleasantly surprised when I didn’t feel as if I were in the chemistry lab stockroom, so I bought it.

I do really like hot and sour soup–it’s my usual test of a Chinese restaurant–usually disappointing since my standard was set in Hong Kong!  I don’t see another trip to Hong Kong in the future, so I thought I’d try it.  My expectations were not really high as I opened the box and tasted it, but it was better than I’d thought–the hot and the sour were pretty well-balanced.  It’s main problem was that it tasted boxed–in other words, it needed some brightening up–like most boxed or canned stocks or broths.

Armed with my box of broth, I decided that although I wanted hot and sour flavor, I didn’t want to buy esoteric ingredients that I might not use again for a while just to try it out.  I thought maybe I could do something that was in the “spirit” of hot and sour soup with what I found in the fridge and pantry without a trip to the Asian market. So no tree ears or lily buds, and not even bamboo shoots.

I found a basket of sliced mushrooms  in the fridge,  shelled edamame and collard greens in the freezer, water chestnuts in the pantry, and some rotisserie chicken and some pork in the fridge that needed given a re-do.  My only addition was a very large handful of julienned carrots (from the salad bar of my local Harris Teeter).

Since this was one of those OMG-I-don’t-have-time-to-cook occasions, I got out the rice cooker (cum slow-cooker) and added the hot and sour “flavor-infused” broth.  I sautéed  the mushrooms in just a bit of peanut oil until browned and gave the carrots a brief swish through the pan with the mushrooms, deglazed the skillet with a bit of the broth, and poured that into the slow-cooker. I added the edamame, collard greens, and the water chestnuts and set it for two hours.

When the collard greens and edamame were done (about 2 hours) I added the chicken and  pork  to heat through.  At the same time I added a piece of fresh ginger root and a small clove of garlic to “freshen” the flavors up a bit.

Obviously not a traditional hot and sour soup, but it was a good test of the “flavor infused” broth, and pretty tasty with the chicken and pork to add some richness, and the textural variety of the mushrooms, greens and water chestnuts.  A garnish  of green onions when served finished it off nicely. (I didn’t add the eggs, either.)

Verdict on the broth–not bad–actually much better than I expected– but if I’m going to make traditional real Chinese hot and sour soup (with tree ears and lily buds) I will start with my own stock–besides, I really like my hot and sour soup with pork. But if it’s just hot and sour I want, I might use another box of “flavor infused” broth!

Rice-cooker pasta with tomato sauce

Some days  a big serving of pasta with a simple tomato sauce is really necessary–it’s kind of attitude adjustment on a plate. On some of those days, it has to be really hands-off since I’m slaving at the computer with a deadline and just can’t be mucking about in the kitchen even though I want something to eat.

One of my favorite “comfort-food” sauces is the very simple one from Marcella Hazan’s Essentials of Classic Italian Cooking–“Tomato Sauce with Onions and Butter” (p. 152).  Not even any garlic.

Krups rice cooker IMG_3796Even though it’s not complicated to make, I wanted it even easier since I had to meet indexing deadline.  I decided to try it in the rice cooker since that’s work well for other pasta dishes.  (I’m NOT kidding–you can cook  pasta in the rice cooker, been doing it ever since I first made mac ‘n’ cheese that way from the recipe that was included with the Krups rice cooker).  This is one where I don’t mind having “leftovers”.

Pasta with tomato sauce

Ingredients

  • 1 14.5 ounce (411 gm) can of diced tomatoes (no added salt)
  • 1 small onion, diced fine
  • 2 tablespoons of butter (also good with olive oil, if you want to avoid the butter–or for a change)
  • salt to taste
  • grated parmigiano-reggiano (for the table)
  • 100 grams pasta of your choice
  • 200 (about 1 cup or 250 mL) water.

Preparation

  • Microwave the onion with the butter until the onion is soft and translucent. eat
  • Add the onions, butter, tomatoes (undrained), salt, and pasta to the rice cooker.
  • Turn on rice cooker and continue working until you smell it–about 15 to 20 minutes, and with a little minor adjustment, it should be ready to eat.

The Krups rice cooker (with slow-cooking and steaming functions as well) is not one of the fancy “fuzzy logic” ones.  Just simple physics of boiling water–it turns itself to warm when the temperature starts to rise when the water has been absorbed and the temperature goes above 212°F.  Simple–and easy to manipulate when you understand how it works.

For this rice cooker, the ratio of liquid to pasta needs to be 2.5:1 for al dente pasta. If it’s not quite there, just add about 1/2 cup more liquid and turn it back on.  When the rice cooker switches to warm function, the pasta will be fairly dry since this depends on all the liquid being absorbed.  If you’re hanging about in the kitchen, peek in about 15 minutes later and check the pasta and the consistency of the sauce. –

I usually  add a bit less liquid –maybe 50 mL short–let the cooker switch to warm, and then add just a bit more liquid, stirring the pasta, to thin the sauce a little, give it a few minutes to heat, and  then eat!

I used spaghetti for this, but broke it in half since full length won’t fit in the rice cooker.  So far this has worked for all the pasta types I’ve tried–penne, conchiglie, farfalle, fusilli, gemelli, macaroni, orzo, and, now spaghetti.  (I’ve only tried “flat” pasta (read “noodles”) once and that has been the only time the pasta stuck together, though that might have been lack of oil during the cooking–or the difference in flour and eggs in the pasta.

…and now it’s turkey soup!

Remember those turkey thighs that I roasted a couple days ago? They have really been a bargain.  I spent about $5 on the package of thighs–two small-to-medium ones.

I had my roast turkey with sides of potatoes and cabbage (with juniper berries). Then I had two full-size sandwiches, and a half sandwich for lunches. Now I’m finishing the turkey thighs with a very hearty bowl of soup (and a  glass of good wine).

I popped those thigh bones (with what meat wasn’t easy to carve for sandwiches) in to my tiny little single-serving crock-pot to make some stock–I just added a little salt, a bay leaf, the brown stuff that I deglazed from the roasting pan, and enough water to cover the bones. After slow cooking overnight, I removed the thigh bones.  The meat just fell off into the pot.

In the same little crock-pot (don’t want extra dishes to wash), I added a small handful of barley, some dried mushrooms of various sorts–including shiitake, chanterelle, and porcini. The other things that went into this soup were the leftover cabbage (with juniper berries) and a few potatoes that were roasted with the turkey.  (You may be thinking that this is pretty heavy on starch, but to finish the soup, I added some green stuff.)

About half an hour before I was ready to eat, I went out to the garden (which I share through the good graces of a neighbor) and picked a good size handful of small kale, turnip, and mustard greens.

After washing, I cut these in bite size pieces (though that was almost unnecessary as they were really not as big as my hand). They went into the crock-pot; in about 20 minutes they were still bright green but tender.

I did a final adjustment of salt using French Grey sea salt, and finally added several drops of black truffle oil to finish the soup.

I’ve had my bowl of soup for supper this evening–and it looks as if I’ll get one more meal out of those turkey thighs–with the barley, and the amount of meat that was left on the bones, there is easily another serving of this soup for lunch or supper tomorrow. (I’m sure that by the time I reheat it, those greens won’t be quite so bright green, but the flavors may have melded with the other ingredients so it should be good–maybe even better than this evening.

I opened a bottle of wine this evening that was a completely unknown to me. It was a limited release called “Dark” from Apothic. I was completely beguiled by the description that said that it “blends dark fruit flavors of blueberry and blackberry with opulent notes of coffee and dark chocolate”.  How could I possibly pass that up? (I found it while shopping at Harris Teeter–just after I had bought a case of something called “Besieged”–more about that one later.)

I was surprised how dark it was when I poured it into the glass! (I even tried to take a picture–but it just looks almost black–so forget that.) It is definitely a “big” wine and right out of the bottle it was fruity and mellow–but after breathing for a bit it lives up to its description.

I thought it might overwhelm my bowl of turkey soup, but with the juniper berries, the rather emphatic mushrooms, the flavors of the greens, and the truffle oil, it turned out to be a great combination.  Fortunately there is some of the wine left for tomorrow’s soup! This is one time when I’m looking forward to the “leftovers”.

A pork and kale braise

It’s been chilly, cloudy, and grey–just the kind of weather for soups, stews, and braises. It’s also time to get the freezer stocked with some quick, easy food as I’ve got indexing projects coming in–some while I’m still teaching this Fall term.  With lots of grading to do as well, I wanted something that would take care of itself while I worked–so out comes the all-purpose “rice” cooker for some slow-cooked food.

I’m a great fan of pork almost any way you fix it so when I found a package of boneless pork ribs–just the ticket for the slow-cooker–while I was doing my grocery shopping on Thursday it obviously went into the cart. Big package, but on special, so it came home with me to make a lazy meal, and some to go into the freezer for quick meals when I’m really busy, or when I need comforting, peasant-style food. Can’t pass up inexpensive on something I really like.

Braised pork and kale from the slow-cooker

Ingredients

  • boneless pork spare ribs, about 2 pounds
  • 1 packaged of frozen, chopped onions
  • chopped kale, one frozen “family” pack
  • 6 large garlic cloves
  • 1 14.5-ounce can of fire-roasted tomatoes
  • 2 tablespoons of Hatch chili powder
  • 2 teaspoons of kosher salt, adjust to taste as needed when cooking is finished

Preparation and cooking

  • cut pork into about 2-inch pieces
  • add half package of kale and onions, mixing
  • layer in pork, sprinkle with salt, chili powder
  • add remaining kale and onions
  • add fire-roasted tomatoes with juice
  • close the lid and set for 8 hours
  • shred pork using two forks (if desired)
  • check seasoning and adjust as necessary.

No, no pictures as  this is NOT a photogenic dish, but it sure is tasty! And there’s certainly nothing like complicated technique involved here.

Great served with a side of spicy black beans, or garbanzo beans, or just a big bowl on its own. This particular time I had a roasted winter squash as a side with it. (Now, to turn the rest of the winter squash into another meal–maybe stuffed with some Sicilian sausage that also went into the grocery cart.)

There was more liquid than I had anticipated when this was finished cooking, so after packing some in zipper-lock bags to go into the freezer (with SOME juice), the extra juice with some kale and some shredded pork is going to turn into soup–details will evolve when it’s used–but that’s an additional meal out of that pack of spare ribs!
